Salad – Laura’s Southwest Salad

Squirrels, pt. 2

I filled up my bird feeders last weekend and caused quite the stir in the neighborhood. At one point, I had at least 10 birds and 5 squirrels squabbling over the delicious stuff. You’d think it was the mac and cheese I made for youth group!

Anyway, though you might enjoy some photos of this squirrel’s balancing act.

I don’t think Lucy has ever actually caught a squirrel, though she’s tried to do so her whole life.

She did, however, once catch a bird–at least that’s what my CSI detective skills showed later in our backyard. There were feathers and drops of blood, but nothing else. This was in the prime of her life when she was only about 3 or 4 years old.

Now she’s just excited to be able to get outdoors and sniff some delightful squirrly smells.

Laura’s Southwest Salad

Well, this salad is delicious! It’s made of corn, black beans, avocado, red pepper, tomatoes, onions, some olive oil, seasonings and lime juice. I had some cilantro to add, but unfortunately it had gone bad, so we were cilantro-less. Still it was fresh and tasty.

This recipe came from Shirley Z. who is one of our snowbirds still in Florida. It’s lonely without these members who leave us for the winter. We’ll be glad when they’re all back! Thanks, Shirley, for this great recipe!
