Bonus Recipe – Shrimp Po Boys

On the day after Easter, you may be tired of lamb, ham, turkey, or whatever other big dishes you had if you celebrated the holiday. Shrimp po boys can be a nice change!

Shrimp seasonings:
1/2 t. paprika
1/2 t. garlic powder
pinch cayenne pepper
1 t. oregano
1/2 t. thyme
salt and pepper to taste

Spread for bread (optional):
2 T fat-free mayo
1/2 T lemon juice
1 t. tabasco

1 french baguette/bread

5.5 oz. peeled and de-veined shrimp

olive oil

Combine the seasonings in a bowl and then toss in the shrimp. Heat oil in a pan, and then add the seasoned shrimp. Cook for approximately 3-5 minutes until nicely blackened and shrimp is pink.

Combine the spread ingredients and then spread onto the bread. (Bread is optional, however. This shrimp is delicious without!) Add lettuce and tomato to bread, and then 5-6 shrimp.

Serve and enjoy!
